If you are looking for an alternative to nut based  milks, you could consider rice or grain milk. It is pretty easy and cheap to make. I would suggest you use organic rice if you want the best quality milk.

Easy Coconut Milk Recipe

Coconut Milk

I love Thai food, I am always throwing together some  delicious Thai dish. Often enough it involves  coconut milk, I was buying the canned variety for quite some time. Until I realised I could just throw together my own coconut milk in minutes. I have saved a ton of money making my own, it not only tastes fresher but I also avoid all the dangers that come with canned food.

Here is what you need:
-½ cup dried shredded coconut
-2 cup flitered or spring water  water
-2 dates, soaked (optional) 

Method 
If you are using the dates soak them in water for half an hour to soften.  Now put the shredded coconut and water in the blender. Blend until smooth, now add the dates and blend until smooth. If you don't wish to add the dates you can leave them out however, if you want some sweetness without the dates you can use agave nectar or any other sweetener. This coconut milk is perfect sweetened or unsweetened.  Now strain the mixture into a bowl using a strainer or a nut milk bag. Voila! Perfect coconut milk for pennies!

When I first went vegan, I found it difficult to steer clear of  delicious beverages like chocolate milkshake and warm glasses of milk laced with cinnamon. I never really liked milk neat, but I loved flavoured milk. I tried the store bought nut milks and I was always really disappointed with the flavour, not to mention the price tag! I decided to make my own, much cheaper and no chemicals! He is my quick and easy almond milk recipe.  Use it for cereal, tea, lattes, smoothies and milkshakes.

Vegan 'Omelette' Recipe

Vegan Omelette

Before I made the life changing decision to become vegan, and eliminate all animal products from my diet.  I used to really enjoy an omelette on sunday morning. I decided to play around with some recipes to make a vegan version that I could enjoy whenever I wanted. I make different variations of this particular recipe however, this is simple and easy with nothing too complicated in it. All the ingredients you should be able to find in your local grocery store. The besan or the chickpea flour, you might have to go to an Indian supermarket or grocery store to get your hands on it.  Anyway, without further delay let's get to it.

Okay, so I have already broken my promise of blogging every day about my raw food life. I have been so overwhelmed with client work and other bits that I could just about vlog. I have pretty much vlogged every day for the challenge, and I am in the process of uploading those videos. I have decided to post those videos on here so at least you guys who don't follow me on Youtube can get an idea of what has been going on in the world of Vegan Fresh. Everything has been amazing actually, apart from a few unpleasant detox symptoms that I would rather not go into right now. Everything has been great, I am really enjoying this raw food lifestyle, I feel excited, energetic and every accomplished.
